For your date night meal this month, we have an easy chicken stroganoff brought to you by Yolandi from A Zesty Life. Date Night meals do need to be fancy or complicated in order to impress. It’s really just about the two of you making an extra effort to make a meal and sit down together as you enjoy it. And I hope you do just that!
EASY DATE NIGHT CHICKEN STROGANOFF
I love making this recipe – it feels like a treat, but it is not too unhealthy or expensive to make either. Plus there are many clever ways to save time when making it:
- You can cook your rice in advance & freeze it. I prefer using white rice, because my experience with freezing brown rice has been less than successful. If you are watching your carb intake, then you can make some cauli rice.
- You can buy ready sliced chicken stroganoff strips.
- It serves four, so if you are going to make it for date night, then you can feed the kids too, keep the rest for leftover lunch or freeze for another day.
Easy Chicken Stroganoff
4 or 5 Chicken Breast Fillets, deboned & skinless
½ Onion, finely chopped
1x Punnet Of Mushrooms (250g), sliced
1x Crème Fraiche
Salt & Freshly Ground Black Pepper
A handful of Italian Parsley, chopped
To Serve: your choice of green veg, rice & a bottle of white wine
Begin by slicing each of the four chicken breasts into longish bite sizes. I use my kitchen scissors for this job, which makes it super easy. Don’t worry too much about making them look perfect – it will just waste some valuable date time.
Heat some olive oil in a medium sized sauce pan & fry the onions until just cooked. Now add the mushrooms. Continue to stir & fry until just cooked. Remove the mushrooms & onions from the pan. Keep warm.
Add more olive oil (if needed) & fry the chicken in batches until golden & cooked. Keep the cooked chicken warm until all of the chicken is cooked.
Now return all the ingredients to the pan, season to taste & add the Crème Fraiche. Cook for about 5 minutes. Just before serving, sprinkle with your chopped parsley. Serve with rice, a side of green veg & an easy drinking white wine. We really like the Sophie te’Blanche 2016 Sauvignon Blanc. Enjoy!
